A real South African favourite, our Snowflake Creations Malva Pudding Kit delivers without fail. Sticky, gooey, and delicious… and unbelievably easy! All you’ll need to do is top it with a dollop of ice cream or warm custard for smiles all round. Expertly crafted by our bakers for an authentic taste experience, simple! Kit includes: - Pudding mix - Apricot jam - Brown sugar mix Makes: Malva Pudding ( makes +/- 12 servings) or Carrot Cake ( makes 1 loaf ) or GInger Biscuits Snaps (makes +/- 24 biscuits)

Usage

Malva pudding: You will need: 300 g malva pudding mix and 2 apricot jam portions MALVA PUDDING KIT • 1 extra-large egg 80 ml cooking oil 200 ml milk Instructions: 1. Preheat oven to 180°C. 2. Beat egg, oil, milk and jam and then add the pudding mix. 3. Beat batter with a whisk. 4. Pour batter into a greased 20 x 20 cm ovenproof glass dish. 5. Bake for ± 25 minutes. Sauce: You will need: Brown sugar mix 50 g butter or baking margarine 250 ml milk/cream/ evaporated milk Instructions: 1. Melt butter in a saucepan and then add the milk and brown sugar. 2. Bring to boil and simmer for 5 minutes. 3. Pour sauce over pudding immediately after baking.

Storage

Store in a cool dry place.

Ingredients

Pudding mix: sugar, cake wheat flour (wheat, wheat gluten), raising agent (E500ii), salt, starch (maize), flavouring. Brown sugar: glucose, cane syrup. Apricot jam: Apricot puree (minimum 35%), cane sugar, acidity regulator (E330), preservative: potassium sorbate (E202), sodium benzoate (E211), water and thickener (E440).

Malva Mug Pudding With Milk Tart Ice Cream

Ingredients

  • 370ml Selati Castor Snow
  • 2 Eggs
  • 350ml Milk
  • 15ml Vinegar
  • 30 ml Butter
  • 30 ml Apricot Jam
  • 500ml Supreme Flour
  • 15ml Bicarbonate of Soda
  • Pinch Salt
  • 200ml Butter
  • 380ml Selati Plantation Select
  • 200ml Milk
  • 6 egg yolks
  • 120g Selati Castor Snow
  • 15ml almond brandy or amoretto liqueur
  • 500ml cream
  • 2.5ml ground cinnamon
  • 2.5ml ground nutmeg
  • 100g Desiccated coconut
  • 15ml Butter
  • 30ml Selati Castor Snow

Cooking Instructions

SPONGE AND SAUCE:

  1. Whisk eggs and Selati sugar together until fluffy.
  2. Heat the milk to melt the butter and jam.
  3. Add the vinegar.
  4. Sift the Supreme flour, bicarb and salt together.
  5. Alternatively, fold the liquids and the dries into the egg mixture.
  6. Half-fill 8 greased (sturdy) mugs with the mixture and bake at 170C until deep golden brown.
  7. Make the sauce by placing all the ingredients into a saucepan and bringing up to the boil.
  8. Remove and keep warm.
  9. Immediately the puddings are removed from the oven, pour the hot sauce over and allow to soak through.

‘MILK TART’ ICE-CREAM:

  1. Mix the chilled cream and spices together.
  2. Whip to firm peak.
  3. Set aside.
  4. Whisk the egg yolks, castor sugar and almond brandy to the ribbon stage (thick and light) over a double-boiler.
  5. Fold in the cream and pour into a freezer-proof container and freeze for at least 4 hours.
  6. Serve a scoop over the warm malva pudding

COCONUT CRUNCH:

  1. Sprinkle the coconut over a baking tray and scatter the sugar and butter over.
  2. Bake at 150C until golden brown.
  3. Remove and cool.
  4. Serve sprinkled over the ice-cream
